I’ve never tasted pre-fermentation grape juice before — this was a real treat on our recent @twonoteswine visit to @dierberg_starlane in Santa Barbara. Tyler Thomas, an incredible winemaker, had us taste different grape juices and we got to taste the acid/sugar balance that works best before the juice becomes wine. Fascinating.
Also, I was not able to blind identify the grape based on the juice (and luckily apparently most people can’t!) 😅

Here, ‘green harvesting’ in progress. When you have the discipline to cut off fruit this beautiful, the ultimate harvest is sure to be spectacular — and limited.
